Ingredients
– 2 sheets of pre-made pie crust
– 4 medium-sized apples, peeled, cored, and diced
– 1/2 cup granulated sugar
– 1 teaspoon ground cinnamon
– 1/4 teaspoon nutmeg
– 1 tablespoon lemon juice
– 2 tablespoons all-purpose flour
– 1 egg, beaten (for egg wash)
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large mixing bowl, combine diced apples, sugar, cinnamon, nutmeg, lemon juice, and flour. Toss until the apples are evenly coated.
3. Roll out the pie crust on a floured surface and cut it into circles using a round cutter or a glass.
4. Place a spoonful of the apple mixture onto one half of each circle.
5. Fold the other half of the crust over the apples, forming a half-moon shape. Seal the edges with a fork.
6. Brush each pie with the beaten egg for a golden finish.
7. Place the mini apple pies on a baking sheet and bake for 20-25 minutes or until the crust is golden brown.
8. Allow the pies to cool slightly before serving.
